Scotcheroos are basically very decadent rice crispy treats with a twist. These delicious no-bake bar cookies are a wonderful combination of chocolate, peanut butter, and butterscotch. This Scotcheroo recipe from allrecipes is a favorite from our Jackson Hole Bed and Breakfast Recipes list. Below are the super simple instructions:
In a large sauce pan, combine sugar and corn syrup. Heat to dissolve sugar and bring to a boil, then remove from heat. Stir in peanut butter. Add rice krispies and mix until well blended.
Press into buttered 9×13 inch pan. In a small saucepan, melt together chocolate chips and butterscotch chips. Spread combined mixture over the top of the rice krispies mixture. Cool until the topping hardens (you may put in the fridge to speed this process up). Cut into bars and serve.
This recipe is perfection all by itself. If you want to mix things up a bit, you can add m&m’s or pretzel crumbles when you add the rice krispies to the sugar/peanut butter mixture. About two cups of either would work. Feel free to add your own favorite candy to the recipe, as well!
