We love cooking and serving delicious, decadent dishes to guests at our Jackson Hole B&B. But we also love preparing nutritious, wholesome food. These cookies fit the bill on all counts, and we make them almost weekly at the Inn on the Creek. These satisfying little treats also are great for guests with dietary restrictions because they are vegan and gluten free.
Despite that, and sometimes because of it, this is our most requested recipe, as well as our most effortless. These cookies are so easy. And magical – they turn trash into treasure before your very eyes. Take your overripe bananas and make them into cookies that are simpler, healthier and, we think, even tastier than banana bread. The name says it all:
Chocolate Chip + Banana + Oatmeal Bites
2 very ripe bananas
1 cup oats, regular or quick (we use gluten free)
½ tsp cinnamon
Small handful semi-sweet chocolate chips
Optional add-ins or substitutions:
Dash of vanilla
Preheat oven to 350 degrees F.
In a medium bowl, mash banana fairly smooth. Add oats and cinnamon. Mix well. Add chocolate chips and mix.
Line a cookie sheet with parchment (or grease lightly with coconut oil). Scoop batter by tablespoons onto the cookie sheet. Flatten cookies with the back of the spoon if desired.
Bake for 15-20 minutes or until set and very lightly brown. Remove from oven and cool before eating. Recipe yields 12-16 cookies depending on size. Make fewer, larger cookies if you like, but increase baking time by 5-10 minutes.
