Amy’s French Toast Bake

Amy, the proprietor of Inn on the Creek, has been wowing guests with this delicious recipe for years. The secret to this dish is starting with croissants- this decadent ingredient is sure to satisfy. This easy, make ahead recipe will excite and delight guests at your next brunch.


8-12 croissants (can be stale)

12 eggs

1 cup sugar

2 cups whole milk

1 tsp cinnamon

1tsp vanilla extract

3 granny smith apples diced

1 ½ cups huckleberries or blueberries



  1. Grease a glass 13”x9” baking pan.
  2. Tear croissants apart and place in pan with apples and 1 cup of berries.
  3. Mix eggs, milk, sugar, cinnamon and vanilla in a bowl. Pour over croissant and fruit mixture in pan. Cover and refrigerate for 6 hours or overnight.
  4. When ready to bake, preheat oven to 350 degrees. Bake for 50 minutes or until golden brown on top. Sprinkle remaining ½ cup of berries over the top and serve with maple syrup.
