Some desserts and breads are best-suited to a certain season. Here at Inn on the Creek, we think lemon poppy seed bread is one of those Jackson Hole Bed and Breakfast Recipes. Something about lemon poppy seed bread says it belongs in summer.
We like to make many variations of this bread, including making it with other citrus fruits instead of lemon. Here is one of the recipes we use and make some modifications to from Chef in Training. This recipe is easy to cut in half if you find yourself not in need of two 9×5 in. loaves.
Lemon Poppy Seed Bread
2 1/2 cups sugar Glaze:
3 eggs 3/4 cup sugar
1 1/8 cups oil 1/4 cup lemon juice
1 1/2 cups milk 2 teaspoon lemon zest
2 teaspoons lemon juice 1/2 teaspoon vanilla
1 teaspoon vanilla extract 1/8 teaspoon salt
3 tablespoons poppy seeds
3 cups flour
1/2 teaspoon salt
1 1/2 teaspoons baking powder
Glaze
Combine sugar, lemon juice, lemon zest, and vanilla into a medium sauce pan. Stir to combine, and then bring mixture to a boil. Once a boil has been reached, poke holes in the top of bread loaves with a fork and drizzle glaze over the tops, making sure it is evenly distributed.
