Add a new classic to this Jackson Hole Bed and Breakfast Recipe Book- skillet pancakes. Santa Claus delivered mini cast-iron skillets to the Inn on the Creek this year and we are busy inventing recipes for them. These handy 5″ skillets enable us to make fun, unique breakfast items to order.
They also have the added benefit of a creative presentation because the dishes are served in the skillets. These pancakes puff up while baking and have a great crepe like consistence.
Ingredients-
Makes 12 individual pancakes
8 eggs
2 cups milk
2 cups unbleached all-purpose flour
1/2 cup granulated sugar
1 teaspoon fresh orange zest
1 teaspoon vanilla
1/2 teaspoon cinnamon
1/2 teaspoon salt
4 tablespoons unsalted butter
2 cups fruit medley for topping
Directions:
1. Preheat oven to 400 degrees. Place the 5″ cast-iron skillets in pre-heated oven.
2.Mix together eggs, milk, flour, granulated sugar, orange zest, vanilla, cinnamon and salt in a stand mixer.
3.Remove the pre-heated skillets from the oven and put 2 teaspoons of melted butter in each skillet. Carefully pour 1/3 cup of batter into each skillet and place in oven to bake for 8 minutes. The pancake will puff up and turn light gold in color.
4. Let the pancake cool for 2 minutes. Top with fruit medley and a dollop of homemade whip cream.
5. Serve in the skillet for a great presentation.
