This scone is a chef’s favorite because there’s no kneading, rolling or cutting involved, which makes for happy hands. We have experimented with this recipe, adding orange juice and zest, replaced the dried cranberries with dried cherries, but it is hard to bet the original recipe that is below.

1 1/4 cup heavy cream
2 large eggs
3 cups unbleached all-purpose flour
1 TBSP baking powder
3 TBSP sugar
1/2 tsp sea salt
8 TBSP unsalted butter, cut into 1/2-inch cubes and chilled
3/4 cup dried cranberries
