Bed and Breakfast Jackson Hole Wy- IOTC Recipe Book

The fall season brings cooler temperatures, autumn leaves and pumpkins! We are inspired by this fall ingredient to revamp a tried and true brunch recipe at Inn on the Creek, Bed and Breakfast Jackson Hole Wy. Amy’s French Toast Bake is a crowd-pleaser, so simple and versatile! Add seasonal ingredients to the base recipe and have a fresh dish with every season. Fresh berries make a wonderful summer addition or roasted pears add sweetness in winter. No ingredient is more notorious for fall then pumpkins! Try this new addition to our recipe book and ‘wow’ your family and friends with this wonderful fall breakfast dish.

Baked French Toast with Pumpkin

Ingredients-

8 large eggs

1/2 cup pumpkin puree

1 cup milk

2 teaspoon pumpkin pie spice

1 teaspoon vanilla extract

8 croissants

Topping Ingredients-

¼ cup all-purpose flour

¼ cup brown sugar

½ teaspoon cinnamon

¼ cup butter, cut into cubes

¼ cup chopped pecans

2 tablespoon confectioners’ sugar

 

Directions-

  • Coat a 9” x 13” glass baking dish with non-stick spray. Cut the croissants into bit-sized pieces and layer into the baking dish.
  • Whisk 8 large eggs in a large mixing bowl. Add the pumpkin puree, milk, pumpkin pie spice and vanilla and mix well.
  • Pour the egg mixture into the baking dish. The egg mixture should just cover the croissants. Cover and refrigerated for at least 2 hours or preferably overnight.
  • To make the topping, combine the flour, brown sugar and cinnamon. Cut in the butter till the mixture resembles a coarse meal. Fold in the pecans and confectioners’ sugar. Put on top of the dish right before baking.
  • Pre-heat the oven to 350 degrees. Cook for 45 minutes to 1 hour.
  • Dish will be done once it puffs up and is golden brown.
  • Cool for 5- 10 minutes.
  • Top with maple syrup and a dollop of home-made pumpkin-spiced whipped cream before serving.
